You are certain that your corporate DON was "brought to tears" over the way you were treated, and not because of a personal issue she had? Were I the relative of one of the patients witnessing that, I'd be searching for a new nursing home. Though her supposed compassion is nice with regard to employees, my relative would take precedence.

That's a bunch of meaningless drivel. Did she support her statements by giving you examples of situations? Did you ask her to emphasize? Did you try to determine why she has these conclusions?
These statements alone don't establish an HWE. The boss does not have to like you. She may not illegally discriminate against you.
UC is determined case-by-case. The likelihood that you would receive it because you are not happy, and quit, is rather remote. If I were in a similar situation, I would attempt to discuss the circumstance with her on a personal and professional level.
